This is a recipe for pasta-gratin with ham and zucchini that i learned during cooking class at school. It's my most favorite recipe coming from cooking class and i still make it sometimes.
I can only share this much about the recipe, mainly because i lost the original and my memory's a teensy bit hazy. This one is for 6 portions.

- 1 zucchini (if they're small, take 2)
- 1 shallot or small onion
- 2 garlic cloves
- 3 tablespoons green pesto
- 4 tablespoons ricotta
- Parmigiano cheese
- 150 g (approx 5.3 oz) cooked ham (pre-sliced)
- oregano
- olive oil
- pepper and salt
- 250 g (approx. 8.8 oz) pasta (any kind; i use Stortini most of the time)

Chop the shallot, garlic, zucchini and ham and grate the Parmigiano. Let a pot of water boil to cook your pasta in, preferably al dente. Meanwhile, heat up a spoonful of olive oil in a large pan and fry the shallot and garlic. Add the zucchini and oregano and stir-fry for a couple of minutes. Add salt and pepper according to your taste. When the zucchini is nearly done, add the ham and let it fry along for a brief moment. Remove the pan from the heat, add the pesto and ricotta and stir. Once your pasta is ready, add it to the mixture and stir once more. Now, pour the mixture into a casserole dish and top it with the grated Parmigiano. Place the dish in an oven, turn on the "top grill" setting (pre-heating is not necessary) and watch as the Parmigiano topping turns a gold color. Take it out of the oven and enjoy.

Fruit Crumble

800 g fruit (can be raw or canned)

3/4 cup plain flour - note - chopped nuts can substitute for some of the flour.

1/2 cup brown sugar

150 g butter, chilled, cubed

1/2 cup rolled oats

1/3 cup desicated coconut

Preheat oven to 200 degrees C. Put fruit into 6-cup big dish.
Place flour, sugar and butter in food processor. Process until mixture resembles breadcrumbs. Transfer to a bowl. Stir in oats, (nuts) and coconut. Bake for 25-30 minutes or until golden brown. Eat up.

Nicole's sweet potato and red kidney bean hot pot (serves 4)

1 large brown onion, halved, coarsely chopped.
1 large red capsicum, halved, de-seeded, 3 cm pieces
1 garlic clove, crushed
1 1/2 teaspoon mexican chili powder
1 400 g can tomatoes
185 mL (3/4 cup) veggie stock
1 large (~700 g) kumura, cut 3 cm pieces
1 400 g can red kidney beans
1 cup (200 g) doongara rice

1 bunch coriander, coarsely chopped
2 teaspoons finely grated lemon rind
2 garlic cloves, extra, crushed.

Heat oil in large saucepan over medium heat. add onion and capsicum and cook, stirring occasionally, for 5 mins or until onion softens. Add garlic, chilli powder and cook, stirring, for 30 secs or until aromatic.

Add tomato and vege stock to pan and stir well, scraping bottom of pan. Add sweet potato and stir. Bring to boil. Reduce heat to low and cook, covered, stirring occasionally, for 25 minutes or until sweet potato is cooked. Add kidney beans and cook 5 mins or until heated through.

Meanwhile, cook rice.

Combine coriander, lemon rind and extra garlic in small bowl. Divide rice into serving bowls, top with hot pot and sprinkle with coriander mix.

Baked Orange Bananas - Serves 4

3 large bananas, peeled (or 2 medium bananas per head)
2 tablespoons brown sugar (can be omitted entirely - possibly start with 1/2 a tablespoon and see how you go from there)

1/4 teaspoon cinnamon
1/4 teaspoon grated nutmeg
pinch ground cloves (adjust these to taste - use 'Christmas spices')

grated rind of 1/2 an orange
1/4 cup orange juice
1 tablespoon butter or margarine (can be left out)

vanilla icecream to serve
cointreau or orange liqueur to serve (for adults)

*****Please note that this recipe assumes that High is 600-700 watts! Our microwave is 1100 watts.*****

Cut bananas into 2 cm halfmoons - place in a shallow heatproof dish. (Note that the smaller you cut the bananas, the more careful you will need to be when cooking them in the microwave, and the less ice-cream you need to put on them at the end.)

Combine the sugar and spices in a pyrex measuring jug. Add the orange rind and juice (and butter if you need to). Stir and microwave uncovered on High for 1 minute. (Having the rind in the juice like this helps prevent pockets of rind, and helps it release its oils. Possibly also semi-caramelises the rind).

Pour over the bananas and microwave (covered) for 4 minutes more, or until the bananas are soft and warm. Serve with ice-cream (and cointreau over the ice-cream).

Michelle's Baked Apple Cheesecake
100 g butter, melted
250 g plain, sweet biscuit crumbs (gingernuts are nice, but vv. hard to crush!)
250 g cream cheese, softened
2 T lemon juice
100 g castor sugar
2-3 medium sized granny smith apples, peeled and grated - (grate while beating cream cheese)

Combine biscuit crumbs and butter in a bowl. Use a glass to press mixture evenly over base (and sides if poss.) of cake tin. Put in fridge to chill.

Beat cream cheese, lemon juice and castor sugar until smooth and pour onto base. Don't over-beat the cream cheese!

Place grated apple on top.

Bake in moderate oven (~180 C) for 30 minutes or until top is golden-brown. Allow to cool.

Garnish with strawberries.

(400 g small mars bar packet (fun-size)

cup and a bit rice bubbles

1 tablespoon of honey

1 tablespoon of butter)

chocolate (for topping)

mix (bracketed ingredients) together in a saucepan on a low heat until melted, press into container and put in fridge to harden

melt chocolate in double-basin and pour on top of set mixture. return it to the fridge.

cut into small portions and eat.

Vegan Pancakes:

* 1 cup four
* 1 tbsp sugar
* 2 tbsp baking powder
* 1/8 teaspoon salt
* 1 cup water or almond milk ( I prefer almondmilk)
* 2 tbsp vegetable oil

Add the wet ingredients to the dry ingredients, mix well and make as you would normal pancakes. I like to mix in milkless dark chocolate chips or blueberries. :3

These are so hearty and fluffy you'd never guess they were vegan! And they take around 10 minutes to make. :3

From the fabled Family Favourites book, containing all of mum's, dad's, grandma's, and granny's best recipes; Hot Fudge Pudding Cake.

Ingredients

Cake:
* 1 cup flour
* 3/4 cup white sugar
* 2 tablespoons cocoa
* 2 teaspoons baking powder
* 1/4 teaspoon salt
* 1 teaspoon vanilla extract
* 1/2 cup milk

Topping:
* 2 cups boiling water
* 1 cup brown sugar
* 2 tablespoons butter

Mix all the dry ingredients together in a bowl. Add milk and vanilla, stir with a spoon until thoroughly mixed together. Spread at the bottom of a 9''x13'' pan. It will be spread thin, don't worry.

In a saucepan, add the water and boil. Once it reaches a full boil, add the brown sugar and butter. Mix until dissolved, and no further. Pour the mixture gently over the batter in the pan.

Bake at 350 degrees F for 40 minutes. Serves well warm and cold. Enjoy!

Avocado pound cake
Ingredients
*Flour
*Bakingpowder
*Salt
*1 avocado
*vanilla
*milk
*butter
*egg whites
*vanilla

First add in: 1 1/4 cups of flour
1 teaspoon of baking powder
1/4 teaspoon salt
Mix

Then in a separate bowl add two egg whites beat until frothy now you grab 3/4 cups of white sugar and only add two table spoons of it to the egg whites. Set the rest of the sugar aside and beat the eggs until stiff peaks form.

Now in another bowl add 1/3 cups of Pureed avocado with 1/3 cups of butter. Beat
now beat in the the rest of the sugar.

Add in 1/4 cups of milk and 1 teaspoon if vanilla to the avocado beat.

Now add half the flour mixture to the avocado mix and fold in gently then add half the egg into the avocado mix and repeat.

now in a small greased pan add the batter in and put in the oven for 40 minutes on 325.

When the 40 minutes are up take it out and put some tinfoil on it then cook it for another 20 minutes, *metaphorical ding* and once it's done cool in the pan for 10 minutes and then flip onto cooling rack and let cool the rest.

Now you can make frosting for it using the sugar avocado and butter.

makes about 4 or more Enjoy!

I'm making one of these this morning.

I'm not comfortable just copying somebody's blog but I will add some modifications.

I like my yolks runny so 12 minutes at 400F is fine but if you want a harder yolk, bake for 2 more minutes.

Instead of a tortilla, you can also use a slice of bread (I use whole wheat) and if you have a big enough ramekin, you can make them one at a time instead if using a muffin pan.

I made these Mashed Honey-Roasted Sweet Potatoes yesterday. Delicious! I only had three smallish sweet potatoes on hand, so my batch was woefully tiny. They're already all gone, and I could go for more. These were easy to make, very refreshing, and just the right amount of sweet. If they don't have enough flavor (because I tend to enjoy more bland cooking) you can always add some extra honey, maple syrup, or brown sugar!

Another random recipe: My new healthy breakfast! I've been getting sick of having cereal, particularly because I need a decent protein boost before my workouts. I make a serving of natural oats in the microwave with water, then mix in a cup of flavored Greek yogurt. I get a different taste every morning! It's a little boring, but I stay full almost the entire morning. Paired with a piece of fruit or some orange juice, and I've got a good mix of short-term and long-term energy!

Given the falling-asleep-while-baking debacle of last night, I give you: bread pudding!

Ingredients:
12oz stale (or overcooked) bread
8oz dried mixed fruit
2oz brown sugar (light or dark brown)
2oz butter
1 tbsp black treacle
1 egg, beaten
1-2 tsp mixed spice

Grease and base-line a 1lb loaf tin.
Pre-heat the oven to 180C, 350F (about gas mark 4).
Chop the bread roughly into chunks, put in a bowl and cover with cold water. Leave for at least 10 minutes, up to an hour if it's really crusty. Everything should be soft.
Squeeze out as much water as possible, and put the bread into another bowl. Break it up a bit with your fingers. (Throw the water away.)
Heat a tablespoon, and use the hot spoon to measure the treacle. Put the treacle in a small pan with the butter, and melt the two together (low heat, doesn't take long).
Mix the sugar, fruit and spice into the bread. Pour in the treacle/butter mixture and stir. Add the egg and stir again. It should be quite gloppy. Optionally, you can add a couple of tablespoons of brandy or rum.
Spoon into the prepared tin. Use a fork to scrape the top into unevenness, and sprinkle with a hard sugar - demerara or granulated. Bake for at least 1 hour 15 minutes. (With a fan-assisted oven, bake at 160C for 1hr 30, to stop it getting too crusty on top.) It won't rise, and will still be damp in the middle if you test it. Leave it to cool in the pan before turning out. Can be eaten cold on its own as a cake, or hot with custard/ice cream as a pudding.

At Laura's request and for posterity's sake:

How to purée a pumpkin:
-per-heat oven at 450 C.
*-If you're using a small 'sugar pumpkin', cut it into quarts.
*-If you're using a larger, 'jack-o-lantern' size, cut it into quarts, then cut those pieces in half lengths (to make rough triangles).
-Remove the guts off of each piece, leave the skin as is. (seeds can be grilled with olive oil and spices for a healthy snack)
-Place pieces on a cookie baking tray. (Does not require buttering, but use an old tray in case it stains.)
-Put your tray in the oven for 25 minutes.
Let cool enough to handle, then use a knife to get the skin off the pieces.
-Cut the skinned pieces into smaller pieces and use a blender to purée them.
-Voila! Fresh pumpkin purée for your pies and whatnot!

Pumpkin donuts This recipe can be made into oven baked donuts, cupcakes or tiny bread loafs depending on which type of pan you use. Use A toothpick to make sure the middle is ready, especially when making the loafs! Loafs > cupcakes because you can cut just the amount you want. vuv
NOTE: I tried adding 2/3 cup of brown sugar, and i think it really ties the tastes together. I used 2 cups of flour.

Um... Orangecicle cupcakes

Step 1: wait until Halloween and go to the store to get the mix.

Step 2: get ingredients: water, orange shavings, vegetable oil, 2 eggs.

Step 3: crack eggs and measure 3/4 of a cup of water and 1/2 cup of veggie oil.

Put everything in a bowl, and cook for umm.... Can't remember... Just read the recipe on the side of the box...

They do sound yummy, mlohse; I think I'd end up making them whether it was Halloween or not! Did you take a photo of them for us to see, or have they all been eaten already? :P

Your recipes also sound delicious, Spykkie! I love the look of those Vampire Cupcakes too. :) Will definitely have to get out the mixing bowl next year, with the Pumpkin Donuts being at the top of the to-do list!

Cookie dough tree ornaments

You need...

cup of water

flour

salt (just a pinch)

plastic bag

Step 1: follow directions for making normal cookie dough. (put ingredients into bowl, knead, etc, etc)

Step 2: Put cookie dough into a bag to let it sit for an hour or so.

Step 3: Use cookie cutters and\or hands to knead cookie dough into Christmas-y shapes

Step 4: Preheat oven to 300, and pop those bad boys in for about an hour or until hard.

Step 5: Let cool for one more hour, and add glitter, glue, ribbon, etc.

Step 7...ur..6: hang on tree!

I'm absolutely craving this at the moment, although I haven't made it yet. It's my grandmother's recipe:

Ginger Bread

1/4 lb butter
2 tablespoons golden syrup
2 heaped teaspoons ground ginger
1/3 cup brown sugar
1 cup plain wholemeal flour + 1 tspn baking powder
1 cup oatmeal

Melt butter, golden syrup and ginger together. Add all other ingredients. Cook in a hot oven - take out when tacky. Cut into squares while hot.

A later note recommends cooking in a convection oven at 230 degrees C for 14 minutes.

Roasted Butternut Squash with Moroccan Spices - original recipe from Kalyn's Kitchen.

Roasted butternut squash is so flavourful a way of cooking it that I don't know why anyone cooks it any other way. Adding the spices really makes it special though. Takes about 15 minutes to prepare and an hour to cook.

Spice blend
This makes enough for several batches - you only need a teaspoon of mixture for an average-sized squash.

2 tsp cumin
1 tsp coriander
1/2 tsp chili (optional)
1/2 tsp sweet paprika
1/2 tsp cinnamon
1/4 tsp allspice
1/4 tsp ginger
1/8 tsp cayenne pepper (optional)

All the spices are the ground ones. It looks a faff, but really the only essentials are the cumin, coriander, cinnamon and ginger.

Pre-heat the oven to 400F, 200C (about gas mark 8 ).

Carefully top, tail and peel a butternut squash. Cut it down the middle and scoop out the seeds. Cut the flesh into cubes about an inch (2cm) square. An average squash will give about 4-5 cups of flesh. For this amount, put in a roasting tin with 2 tbsp oil and 1 tsp of the spice mixture. Stir well to make sure all the squash is coated with the oil and spices.

Put in the oven for an hour. Take out every 15 minutes and stir well. It will cook down a lot - you'll end up with only a third to a half of the original volume.

It's done when it's soft, browned, slightly caramelised and your house smells of roasted squash. You can eat it as-is or (if you have willpower) use it as a base for soup.

Soup
If you want to go straight for the soup option, prepare a squash as above, but roast with a couple of carrots and onions. When everything is roasted, put in a big pan with a couple of pints of stock, boil up, allow to cool, then blend. Better on the second day, once all the flavours have had time to develop.

This stuff is usually considered "poor people food" which used to be made by the wives of miners:

Strammer Max (Upright Max)
An egg
A slice of bread
A pickle
Some butter
some ham
Some spices

Make a fried egg as you like it. While it roasts, put butter on the bread slice. Put ham on the bread (smoked, not boiled ham). Then cut the pickle in slices and put it on your bread. When the egg is done, put it on the bread with the ham and pickle. Eat it. Done.

Special things that are traditionally carby - pancakes, cookies, cakes, etc. Even things like rissoles that use flour and egg to bind the patties. While for general eating purposes, it's easy to lightly cook gluten-free pasta, or have meat and 3 veg, I'm just finding myself suddenly intimidated by sweets. :)

Okay so this is a easy simple Chocolate-Raspberry muffin/cupcake.

Makes 1 dozen

So here are the ingredients you will need:
1 Cup flour
1/2 Cup white sugar
2 Teaspoons of baking powder
1/4 Teaspoon of salt
5 Table spoons cocoa powder
1 Table spoon oil (do not use olive oil)
1/2 Cup of milk
1 large egg
1/4 teaspoon of raspberry flavoring

Put the flour sugar baking powder, and salt in a bowl. Then sift in the cocoa powder. Mix.

Now make a well in the center of the dry and crack in the egg. Pour in the milk, oil, and raspberry flavoring.

Put one tablespoon of the batter in 12 cupcake liners or in greased pan.

Bake in the oven at 350 for 25 minutes or until tooth pick comes out clean.

for cupcakes just add your favorite frosting on top.

I agree - I think olive oil for cakes can have a tendency to overpower the cake's flavours. I've had good success with sunflower oil instead.

In case anyone else has the need for something sweet and stodgy late at night, when there's very little in the cupboard, I give you...

Vanilla Mug Cake and Chocolate Gravy

The cake is a variation on the 5-minute chocolate mug cake; the chocolate gravy is (apparently) a Texan thing.

First off, mix together the ingredients for the chocolate gravy in a small pan:
3 oz sugar (I used half brown, half granulated)
0.6 oz plain flour
0.5 oz cocoa powder
1/4 tsp cinnamon (optional)
Pinch of salt
1 cup of milk

Stir till smooth but don't cook yet.

In a large microwavable mug, mix together

6 tbsp self-raising flour
2 tbsp sugar
3 tbsp oil
3 tbsp milk
1 tsp vanilla essence
1 egg (beaten)

Stir quickly till smooth, then cook in a microwave on high power for 2 minutes (my microwave is 850W, so you might have to alter your cooking time accordingly). While the cake is cooking, cook the gravy over a medium heat, stirring constantly. Heat until the gravy thickens, then remove from the heat and add 0.5 oz (1 tbsp) butter and 1 tsp vanilla essence, and stir in.

Serves two. (Or one, if you're really hungry.)

Banana Bread

This is one of my favorites, really tasty, simple ingredients, simple to cook, and a great way to get rid of some bananas if they are just sitting around and might otherwise go to waste (it's actually better if the bananas are starting to get a bit spotty)

INGREDIENTS
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

You can mix in some coarsely chopped walnuts if you like as well, 1/2 cup or so should be fine (I never put walnuts myself, so use your judgement on the amount). I tend to reduce the sugar as mentioned above myself.

This isn't a recipe, but I think it'll be useful to a lot of people.

Let's say you need to juice a citrus fruit. But you don't have a juicer or squasher. Or maybe the fruit you have is too big, or even too small for that. It's difficult to get all the juice with only one hand squeezing... But it's easy with a fork.

Hold the fork in your dominant hand like this, but make sure the tines are facing you. Hold the citrus half in your other hand. Fork the citrus half, squeeze around the shape of the fork. Wiggle the fork around in up-down motions as you squeeze. This gets the juice quicker than with just your hand or using a fruit squasher.

Had a bit of a disaster with this recipe - it comes from trying to cook a dessert with quinoa, which I've never cooked before, and in the microwave (instead of a pot as shown).

A few points I learned:

A fine-meshed sieve is essential in washing quinoa. Straining with a teatowel won't cut it.

On cooking the quinoa in the microwave the first time, (3 minutes on HIGH, 12 minutes on MEDIUM-LOW) I had to strain off about 1 cup of water. I reduced the amount of milk to 1 cup when cooking the quinoa the second time (2 minutes on HIGH, 15 on MEDIUM-LOW). I also forgot the maple syrup, [nblush] and had to use sultanas instead of raisins.

As soon as you get the quinoa cooking the first time, it's important to start the cranberry syrup so that it will have time to reduce.

The verdict ended up being 'Would eat again' from my testers (I wouldn't.. not keen on rice puddings, and this was a rice pudding.), but I don't think I'd cook this again. XD

Now, the original recipe:

Quinoa Pudding with Cranberry Compote (serves 4)
delicious, Oct 2006, p.110 (from Bill Granger).
1 cup (200 g) quinoa
2 cups (500 ml) milk
1/3 cup (55g) raisins
natural yoghurt, to serve
1 cinnamon quill
1 tsp vanilla bean paste
2 tbs maple syrup

cranberry compote
2/3 cup (100 g) dried cranberries
1/2 tsp ground cinnamon
1/4 cup (55g) castor sugar

Rinse quinoa well. Bring to boil quinoa and 2 cups cold water, reduce heat to low, cover for ~12 minutes or until water evaporated and quinoa tender.
Add milk, cinnamon, vanilla, syrup and raisins
Return to boil then reduce to low for 15-20 minutes or until thick and creamy.

Put cranberries, sugar, cinnamon and 1 cup water in saucepan. Dissolve sugar. Boil, then simmer until syrupy.
Serve compote over quinoa topped with yoghurt.

Okay so I made my Chocolate-Raspberry muffin/cupcake again only with some different changes I added in raspberries (1/2 cup) along in the batter. I then put 1 tablespoon of sugar in a pot with 1/4 cup of raspberries and cooked it on medium heat till it made a sauce, I then dipped the top of each muffin that was done and then you can add frosting. :)

I did a cross between a Strammer Max (Papriko's recipe) and a Mexican Torta. Delicious. Here's a basic recipe for a Mexican torta:

bolillo (Mexican baguette)
butter
meat
avocado
tomatoes
cilantro
onions
salt
ground black pepper
jalapeño peppers (if you have a low spice tolerance, you can exclude this)
lime

Slice the bolillo into two buns. Spread some butter on the bottom and top buns.

Press the buns, butter-side down, on a frying pan on medium heat. If they're the circular bolillos then you might have to do the buns one-by-one, depending on the size of your frying pan. Make them as toasty as you want.

Mince the cilantro, and chop the onions, tomatoes, and jalapeño peppers. Mix all that in a bowl, squeeze lime, and season with salt and black pepper. This is a salad called pico de gallo.

Slather the avocado on one of the buns. Then place the pico de gallo and the meat, and make a sandwich. Eat!

Here's a rather simple recipe for avalanche bark, which is a bar you can buy at rocky mountain chocolate factory... it's always really expensive, so I make a homemade version that tastes almost identical at a fraction of the cost. And you don't need an oven!

Avalanche Bark
12 ounces white chocolate, finely chopped
½ cup peanut butter
1½ cups Rice Krispies
1½ cups miniature marshmallows
½ cup miniature chocolate chips

1. Line an 8-inch square pan with parchment paper; set aside. Place the miniature chocolate chips on a plate and place in the freezer until ready to use.

2. Combine the white chocolate and peanut butter in a mixing bowl and microwave on 50% power in 30-second increments, stirring after each, until completely melted.

3. Remove from microwave and stir in Rice Krispies. Let the mixture sit and cool until it reaches room temperature, stirring occasionally, about 10 to 20 minutes. I'm always impatient and I don't wait for it to cool at all. XD

4. Gently stir in the miniature marshmallows, then the miniature chocolate chips.

5. Turn the mixture into the prepared pan and press into an even layer. Refrigerate until set, about 15 minutes.

6. Remove from the pan and cut into squares. Store in an airtight container in the refrigerator for up to 1 week.


Another ridiculously easy sweet snack. I always make a cookie in a cup on really bad days...

1-Minute cookie in a cup
1 Tablespoon unsalted butter
1 Tablespoon granulated sugar
1 Tablespoon brown sugar, firmly packed
1/2 teaspoon vanilla extract
1/8 teaspoon (pinch) salt
1 egg yolk
3 Tablespoons all-purpose flour
1-2 Tablespoons chocolate chips

Microwave butter in a mug until melted, 30 seconds to 1 minute. With a spoon, mix in sugars, vanilla extract and salt until well-combined. Mix in egg yolk until no traces of the yolk are seen. Mix in flour. Fold in chocolate chips.

Microwave on high for 40 seconds, or a maximum of 50 seconds. Serve warm (maybe even with a dollop of ice cream).

Enjoy!

Finally, I made this today. a local chinese place offers mai fun but, unable to order it, I decided to go get the ingredients and make it myself. :P although the final product didn't really taste like the stuff from the restaurant, it was really good in its own right. Although I will probably not use any bean sprouts next time, and double the eggs (I like eggs). I wouldn't use bean sprouts simply because my local grocery doesnt have any fresh, just canned, because it spoils quickly.

Mai Fun
1 (6 ounce) package skinny rice noodles (commonly called vermicelli)
1/2 cup reduced-sodium fat-free chicken broth
3 tablespoons low sodium soy sauce
1 teaspoon sugar
1/2 teaspoon salt
cooking spray (I didn't use any, as I never use spray)
1 tablespoon peanut oil, divided (I just used butter)
1 large egg, beaten lightly
1/2 cup red bell pepper, cut in strips
1 tablespoon grated peeled fresh ginger
1/4 teaspoon crushed red pepper flakes
3 -5 garlic cloves, minced
8 ounces boneless skinless chicken breasts, thinly sliced (I didn't use any, just the shrimp)
1 tablespoon curry powder
8 ounces medium shrimp, peeled and deveined
1 cup sliced green onion (1-inch slices)
1/2 lb snow peas, sliced thinly
1/2 lb mung bean sprouts (optional, imo)

1 Cook rice noodles according to package directions, leaving out any fat or salt that may be called for.
2 Combine broth, soy sauce, sugar and salt, and stir together till sugar dissolves.
3 Heat large nonstick skillet over med-high heat; coat pan with cooking spray.
4 Add 1 tsp oil.
5 Add egg; stir-fry 30 seconds or until soft-scrambled, stirring constantly.
6 Remove from pan, and set aside.
7 Wipe down pan with cloth or paper towel.
8 Heat remaining oil (about 2 tsp) in pan over med-high heat.
9 Add bell pepper, ginger, red pepper, and garlic; stir-fry 15 seconds.
10 Add snow peas, bean sprouts, curry, and shrimp; stir fry two or three minutes, until shrimp is nearly done.
11 Stir in egg, noodles and broth mixture; cook 1 minute or until thoroughly heated.
12 Sprinkle with green onions.

I attempted to make 'Hungarian' goulash yesterday in the slow cooker - I've only made it before on the stovetop with minced meat.

Into the slow cooker went:
2 onions
2 cloves garlic
4 oxtail steaks

Mix sauce ingredients in mug and add as a sauce to the meat, slow-cook in the morning.

3 tablespoons tomato paste
3 American tablespoons sweet paprika
1 cup beef stock + water

Now for the 'stone soup' portion - through the afternoon, I added these veggies:

2 carrots cut in rounds, took bones out 3 hours before desired serve time.

3 sticks celery cut in moons 2 hours before desired serve time.

2 chunked capsicums, a bowl of quartered mushrooms, 2 zucchini in rounds an hour before desired serve time- should have been in earlier, or turned up heat to high at this point.

Served with mashed potato and green beans. Very watery sauce - I mixed it with the mashed potato on my plate to sop it up a bit.

Will add a can of chickpeas to the leftovers and try to thicken the sauce somehow. I underestimated how much water the veggies would give off. I felt it needed more garlic (perhaps even 3x as much), but my testers thought a hint was enough. (There's no accounting for taste...) but otherwise got 'very goods' all round. I got the suggestion 'needs more paprika' from one of my testers...
