This is an olde family favourite, comes from my mother's friend.

Raspberry Coconut Slice

(for a 13inch x 9 inch pan)

Base
1 cup plain flour
1/3 cup SR flour
2 T sugar
130 g butter
1 1/2 eggs
3/4 cup raspberry jam

Topping
1 1/2 eggs (and you thought I was mad when I put the first half egg)
2 T sugar
1 3/4 cups dessicated coconut

Sift dry base ingredients together, rub in butter and mix in lightly beaten egg to make a soft dough.
Press dough evenly over base of baking paper covered 13 inch by 9 inch tin (must have walls) Spread dough with jam.

To make topping, in a seperate bowl, beat eggs and sugar together, mix in coconut. Spread this over the jam.

Bake in a moderate oven for about half an hour, or until golden brown. Let stand five minutes and turn onto wire rack to cool, cut into slices when cold. Keeps 4 days (if you can keep the 'rats' out!)

Mmm, that tortilla and cheese sounds yummy!

Yesterday I decided to have salad for lunch, and once again there are no solid measurements, but I thought I'd share the ingredients because it tasted really good!

Ingredients:
Torn lettuce
Luncheon Meat of your choice (I've used ham and roast beef thus far)
A slice of mild cheese, such as cheddar, Swiss, or Muenster
Poppy seed salad dressing

To make:
Put the torn lettuce in an appropriately sized bowl. Cut up a slice or two of the luncheon meat and place on top. Cut cheese into small sticks and place on top. Drizzle with salad dressing to taste.

You might also try adding some fruit, such as fresh pear chunks or dried cranberries.

I went to a party for Father's Day on Sunday, and The Chef (son-in-law of the host) brought this *divine* Strawberry Fool... The strawberry taste was really strong. :)

Strawberry Fool

500g strawberries
100g icing sugar
Juice of 1 lemon
40g caster sugar
250ml double cream
250ml greek yoghurt

Puree 400g of strawberries with the icing sugar and lemon juice. Finely chop the reserved strawberries and sprinkle with caster sugar. Whip the double cream until it forms soft peaks, beat in the yoghurt. Fold in the strawberry puree and chopped strawberries. Place in four wine glasses and refrigerate for an hour. Can also be served in a bowl, but needs fridging for three hours before serving.

Egg Fried Noodles

Ingredients:
Noodles
Egg
Spring Onions
Olive Oil (or any kind of cooking oil)
Soy Sauce
Sesame Oil
and other veg of your choice (I used mushrooms)

1. Cook the noodles according to packet instructions. If you have egg noodles this wont be for any more than about 4 minutes

2. in the mean time prepare the spring onions and mushrooms, start to fry them in a little olive oil. In the mean time you'll probably want to drain the noodles.

3. When the veg and noodles are both cooked, put them to one side and heat up a little more oil in a large wok. Add a little sesame oil and crack as many eggs in as desired (one per person works best in my experience) Scramble them for a minute or two.

4. When they are almost done add the noodles and veg, stiring them into the egg thoroughly. Add plenty of soy sauce and more sesame oil for taste and serve

When making boiled eggs, make sure you add the eggs to the water BEFORE you boil it. This is better than adding the eggs to the water when it is already boiling because the eggs won't crack when they're in the water.

Also, to make soft-boiled eggs, only boil them for a total of five minutes, moving them occasionally with a wooden spoon.

caramelised onions
might sound pervert but it's yust perfect on a burger.
You need:
Onion (one should be enough for some burgers depending on size)
sugar (one or more tablespoons)
some oil

cut the onion(s) into stripes (aprox 4mm thick and maybe 2cm long)
let the oil get hot in a pan and put the onionpices in, let them get a nich gold brown color. Than carefully add the sugar, in the ideal case the onions get soft and become a bit more goldbrownish. When you feel they are ready take them out and serve them.

My friend gave me a REALLY tasty recipe for banana bread, I thought I'd share:

Banana Bread

You will need

* Loaf baking tin
* Large mixing bowl
* Wooden spoon
* 4 mashed bananas (over-ripe)
* 75g melted unsalted butter
* 225g sugar (I use 200g as the bananas I use are usually too sweet to eat)
* 1 beaten egg
* 1 tsp vanilla *
* 1 tsp baking soda
* Pinch of salt
* 225g all purpose plain flour

Pre-heat oven to gas mark 4, 350 F, 175 C and butter/grease the tin.

I use my hands to mash the bananas as it's easier and I like getting messy! ;)

Mix melted butter with mashed bananas together in a large bowl. Mix in sugar, egg and vanilla. Sprinkle in baking soda and salt. Add the flour last and fold in until everything is mixed together. Bake for 1 hour (set a timer if you're anything like me!). Cool for 15 minutes (if you can resist!) and enjoy!

* You can substitute the vanilla for cinnamon, add walnuts or almonds. Once you've made it a few times, you'll notice how lenient the recipe is!

And here's one I made yesterday; it is DELICIOUS.

So the cookie thread got me thinking - here's my recipe for lemon cookies, it's great for kids to do with minimal supervision. :)

Lemon Cookies

Makes approx 48

1/4 cup milk
1 teaspoon vinegar
125 g butter
3/4 cup sugar
1 egg
1 teaspoon grated lemon rind
1 3/4 cups plain flour
1 teaspoon baking powder
1/4 teaspoon salt

Turn oven to 180 degrees C. Mix milk and vinegar and set aside to turn sour.

Beat butter, sugar, egg and lemon rind until smooth. To make this step easier, cube the butter beforehand to increase its surface area.

Sift in flour, baking powder and salt.

Add sour milk and mix it well.

Put teaspoonfuls of the dough 5 cm apart on an oven tray.

Bake 12 minutes or until golden.

Lift off tray and cool on a wire rack.

Glaze: Mix 1/2 cup of icing sugar and 2 tablespoons of lemon juice until mixed and smooth - spread on a hot cookie and leave until cold.

What I like about this recipe is that it uses up cauliflower (which tends to remain in our fridge for ages), and that the curry and red onion makes it taste great. :) It does need to be put together just before you serve, though. Don't be afraid to experiment with the seasonings.

Curry Roasted Cauliflower

1 head cauliflower

1/2 a large red onion

2 Tbsp olive oil

1/2 Tbsp curry powder (can be any kind you like - try some different mixes, like garam masala - also, don't be afraid to double the curry if you like curry.)

1/4 tsp crushed red pepper

salt and pepper to taste

1/2 cup frozen peas

Preheat the oven to 200 degrees C. Cut the cauliflower into bite-sized florets, and wash and drain well in a colander, removing as much water as possible.

Slice the onion into medium-to-thickish strips and line a baking sheet with foil. Place the cauliflower and onion into a bowl and mix well with the oil and seasonings. Spread on the baking sheet and place in the oven for 45 minutes (depending on if you've got a hot oven - you want the edges to crisp up and turn golden brown). About half way through, take it out and stir it so that all the pieces cook evenly.

Wash the bowl and thaw the peas - place the cooked cauliflower and onion and peas in a bowl - mix them and serve warm.

I've always known this as 'Chow Mein', but it's a very 'English' recipe, I think - it's one of those recipes that got adapted to Western tastes, probably by the 40s and 50s and has stayed popular. I'm pretty sure it used to be on Home Economics syllabi. It's also been called "Hi Ling Ming" and "Hi Ti Min", "Hi Li Min", "Hi Ming" etc.

Quantities:

For the rice:
2 measures white rice
2 and 1/4 measures water (for a white rice with a drier finish which will soak up more sauce)

For the spices:
1 onion
1 clove garlic
1 teaspoon grated ginger (fresh or in a jar)
1 scant teaspoon chili paste (in a jar) or 1 chili
1 quantity ras el hanout (3 tablespoons and 1/4 teaspoon for the ras el hanout) or 1 tablespoon curry powder

Meat:
1 kilo beef mince

Veggies:
6 small carrots, cut in rounds
1 head cauliflower cut into bite-sized florets
1/2 medium-sized head cabbage, shredded roughly

To simmer:
500 ml chicken stock (or stock cubes and water)
a glug of soy sauce (optional)

Method:
Put rice on to cook in the rice maker.

Sautee onions and spices (garlic, ginger, chili, ras el hanout/curry) until cooked.

Add beef mince and brown.

Cut carrots (rounds are fun!). I like to zap the carrots in the microwave to make sure they're cooked (fully cooked carrots are a sweet counterpoint). Prepare any other stir-fry-like veggies while the meat is browning. (Frozen 'frenched' green beans also go well with this, as does celery. Cauliflower and broccoli too. Red capsicum can also be added for sweetness.) Left over cooked side veggies, chunked, are also very addable - at the cabbage stage. Shred the cabbage and place in a large bowl.

Add the more substantial (hard) veggies to the meat and spices. Add liquids (chicken stock, soy). Stir and simmer. The challenge here (for me) is not to overcook the veggies.

Add shredded cabbage and any soft or raw veggies (capsicum, frozen peas, etc.) and cook on a gentle heat until just wilted. Serve with white rice to soak up the juices.

This is pretty alterable both in the spices that you use and the veggies that you use - you can make it HOT for adults, or play the 'use up the veggies' game. If you don't have enough the second night, you can stir in the cooked rice to the chow mein and serve it that way.

This quantity makes about 8 serves of the meat, and 4 serves of rice.

Okay, so this is a recipe me and my little sister love to make. It's kind of like popcorn ball, but not. [nlaugh] Brace yourselves, she came up with the name herself!

*Chocolate Spock Corn!*

The recipe all depends on how much of the stuff you want, but it's easy to alter where necessary. These are just the measurements we used for ours.

2 bags of butter flavor popcorn (You can use the plain kind, it works just as well. Or kettle-corn if you like it really sweet)

Pop the popcorn and spread it out on a baking sheet, one bag per sheet. Make sure to pick out any kernels. Let the popcorn cool completely.

In a medium saucepan, melt 4 cups of semi-sweet or milk chocolate chips with 1 1/4 cups of margarine. Make sure it's very melty.

In a large bowl, mix the chocolate mixture into the popcorn, along with 2 1/2 cups of jelly beans. (If jelly beans aren't your thing, you can substitute in gumdrops or other small chewy candy.)

Be careful not to mix too much, or it'll get borked and you'll have to start over. You only want to mix until there's a bit of chocolate on all the popcorn, not until everything is completely covered! If you find you have too much chocolate, reduce the amounts of your next batch.

Press the mixture onto the two baking sheets, and liberally sprinkle with your choice of sprinkles. Place the pans in the fridge until completely cooled. Once cooled, seperate the Spock Corn (it'll be stuck together) and transfer it to a large bowl. Refrigerate until serving time.

Alternatively, mold the mixture into balls, add the sprinkles, and freeze for gummy chocolatey popcorn balls!

It's a simply lovely treat for parties. I like it because it's very versatile, I've never really made the same thing twice with it. Great fun to make with kids, and you can really add anything you want to it. I highly recommend trying candy cane bits, or marshmallows and graham crackers, or coconut.

This website has the recipe I used to make banana bread yesterday:

That banana recipe is fab. Used 2 bananas, it didn't need the yogurt - it was almost too moist. Would've perhaps cooked better in big muffin tins (or just follow the instructions to make 2 small loaves - but I didn't have a small loaf tin).

Glad I could help [nsmile] But yeah the bananas I used weren't the biggest, and the bread did end up very moist (but not too much so in my opinion). It only lasted about 24 hours in my house before it was eaten up haha!

Yeah I used one big glass bread pan, that's all I've got besides a muffin tin for these sorts of things.

Oh I've got another really great easy recipe for you guys, I have it memorised.

Homemade Mounds/Almond Joys

1 can sweetened condensed milk
1 cup powdered sugar (add more if it won't shape)
1 bag of sweetened shredded coconut
Combine, shape, add an almond or two if you want, and dip in melted milk or dark chocolate with some parafin wax mixed in. Let it set in the fridge or freezer. YUM!

I just tried something new today and thought I'd mention it here. :D

It was called a 4 cheese salmon.
I'm not sure what the 4 cheese was, it was in the form of a log and clearly had herbs mixed in. It tasted good on it's own, not too strong but noticeable flavor with a hint of saltiness to it. It was wrapped in spinach leaves in the middle of the salmon piece. All the tastes came together great!

Next time i go to the grocery store, I'll have a look in the cheese section to see if i can see a type of cheese logs that looks and smells similar. (This dish was prepared and packed at the grocery store, which means they very likely sell that type of cheese already.)

I'll have to remember to tell you guys if i do find the cheese for this recipe- after all, knowing the ingredients is all you need to make your own for much cheaper at home! :D

I also think that cheese might make good stuffed chicken breasts. *wonders*

This meal was 6$ (the piece was so big that i only ate half, tasty left overs ftw!) if most of the cost is obviously attributed to the large portion of salmon involved, chances are the cheese on its own must be pretty affordable! :)

I made a delicious dessert for the second time! The Orange Dream Torte tastes like a creamsicle, and isn't as unhealthy as most desserts are. It makes a very light and refreshing summer treat!

My recommendation is to skip out on the "frozen whipped topping" which is typically a bunch of artificial and unhealthy ingredients. This time, I substituted it with the sour cream topping from this page. My sampling of everything tasted wonderful, although I will say that the filling was more liquidy than the first time. Probably should have chilled it before spreading it on the top... This torte has the filling dripping down all the sides like icing, although it looks quite nice!

Here's a simple recipe I found because I like vegan cakes and wanted to make a quick chocolate one. It's called a depression or wacky cake because it was created in the depression era when dairy was expensive. I added vanilla to mine but you don't have to use it.

- 1&1/2 cups all-purpose flour
- 1 cup white sugar
- 1/2 teaspoon salt (optional)
- 1 teaspoon baking soda
- 1/4 cup cocoa powder
- 6 tablespoons vegetable oil
- 1 tablespoon white vinegar
- 1/2 tablespoon vanilla extract
- 1 cup water

Preheat oven to 350 degrees (F) and prepare an 8x8" cake pan/glass pan by using nonstick spray or spreading it with canola oil. After mixing the dry ingredients first, add the wet and mix those together. Bake the cake for 30 minutes or until done. Dust with powdered sugar or use regular frosting and enjoy.

I got the recipe here.
